Ainsi de nombreuses souches de levure ont \u00e9t\u00e9 s\u00e9lectionn\u00e9es, domestiqu\u00e9es et commercialis\u00e9es, conduisant \u00e0 la standardisation des processus fermentaires. Cela a permis d'am\u00e9liorer la s\u00e9curit\u00e9 des processus fermentaires, mais a conduit \u00e0 une certaine uniformisation des produits. C'est pour cette principale raison qu'il existe actuellement un regain d'int\u00e9r\u00eat pour les levures dites \u00ab sauvages \u00bb notamment dans le domaine des boissons ferment\u00e9es (vins, bi\u00e8res, cidres, ') pour lesquelles les producteurs sont \u00e0 la recherche d'authenticit\u00e9 (notion de terroir). Ainsi de nombreuses souches de levure ont \u00e9t\u00e9 s\u00e9lectionn\u00e9es, domestiqu\u00e9es et commercialis\u00e9es, conduisant \u00e0 la standardisation des processus fermentaires. Cela a permis d'am\u00e9liorer la s\u00e9curit\u00e9 des processus fermentaires, mais a conduit \u00e0 une certaine uniformisation des produits. C'est pour cette principale raison qu'il existe actuellement un regain d'int\u00e9r\u00eat pour les levures dites \u00ab sauvages \u00bb notamment dans le domaine des boissons ferment\u00e9es (vins, bi\u00e8res, cidres, ') pour lesquelles les producteurs sont \u00e0 la recherche d'authenticit\u00e9 (notion de terroir). Cette vision se trouve confort\u00e9e par un pl\u00e9biscite des consommateurs qui cherchent dans ces produits locaux une diversit\u00e9 et une complexit\u00e9 retrouv\u00e9es.\r\nAinsi de plus en plus de producteurs s'int\u00e9ressent \u00e0 cette strat\u00e9gie de conservation et d'utilisation durable de cette diversit\u00e9 biologique. Malheureusement, elle se fait actuellement de mani\u00e8re empirique, faute de moyens techniques, et conduit r\u00e9guli\u00e8rement \u00e0 des d\u00e9viations organoleptiques rendant les productions impropres \u00e0 la consommation. L'objectif de ce travail interdisciplinaire est de mettre \u00e0 la disposition de ces entreprises artisanales des outils leur permettant d'utiliser la diversit\u00e9 microbienne \u00e0 leur disposition dans un cadre le plus s\u00e9curis\u00e9 possible.\r\nLes r\u00e9sultats de bioprospection augmenteront la connaissance de l'impact des modes de conduites agricoles (conventionnelle, raisonn\u00e9e, biologique) sur la biodiversit\u00e9. The overall objective of this project is to strengthen cultural diversity, and therefore biodiversity, but also to develop a new sustainable and local economy based on a philosophy that has greater respect for nature. The beneficiaries will be multiple, ranging from consumers and farmers to cosmetic companies or even citizens looking for clean products that are sustainably and locally sourced. \r\nThis initiative will prove to future generations that it is possible to develop an open-source, sustainable project, that is both respectful of the environment and helps to preserve our heritage, all while creating a new economy. A transnational approach is essential in order to identify plant species that can cover various needs. A healthy gut microbiota protects from invasion and colonisation of the gut by enteropathogens by (i) colonisation resistance, (ii) producing a range of metabolic substrates which are utilized by the host and (iii) stimulating the immune system in a non-inflammatory manner. Novel foods or GRAS (generally regarded as safe) compounds of food origin have the potential to modulate the microbiota of the human gut and\/or causing a beneficial change in the metabolic profile of the microbiome. Through collaboration with other work packages in this project, novel fibers and phytochemicals will be assessed in vitro using a validated two-sage model of the human gut. The model allows a for reproducible colonization process, which in combination with the other criteria allows different treatments to be compared without health risks to a host.
